Hope you all had a great Mother's Day! I finally remember the drink that my Grand-Mere used to have with her special Mother's Day breakfast. It was called Mimosa aux fraises. I spend many summers with my Grand-parents in England. Grand-Mere had a beautiful garden, mostly a fruit garden. She loved to grow strawberries, raspberries and mint. They were a couple of fruit trees, a pear and an apple trees. Grand-Mere was always trying something new with the fruits. Either jams, apple and pear butters, and special drinks. I think the Mimosa aux fraises was one of her favorite, because the entire strawberry season that was all she wanted to drink on Sundays.They are refreshing and very easy to make. She used to serve them with shortbread cookies and dunked them in the Champagne flutes. Enjoy!
Strawberries mimosa:
4 cups strawberries, hulled and sliced lengthwise
1/3 cup Grand Marnier
1/2 cup guava juice or fresh squeeze orange juice
2 tablespoons of sugar (less if the strawberries are vey sweet)
2 cups dry Champagne
8 sprigs fresh mint for garnish
8 shortbread cookies
In a large bowl combine strawberries, Grand Marnier, and juice. Add sugar and mix gently. Cover and chill for 35 minutes. Do not let them chill any longer or they will become mushy. Spoon the berries into 8 Champagne flutes or coupes, pour 1/4 cup of Champagne over berries, garnish with the mint. Serve immediately with the cookies.
