With Mother's Day around the corner, I am reminded of a special Mother's Day I celebrated in England with my Grand-Mere. Mother's Day was my Grand-Mere's favorite holiday. The reason? My Grand-Pere would make breakfast for her and serve her breakfast in bed. That was the only time you would see Grand-Pere in the kitchen. Grand-Mere used to tell me that she would plan her menu, prepare everything the night before including the complete recipe for breakfast, down to the rose. Most of the time it turned out fine but occasionally he would forget something. But she kept it to herself and enjoyed her well deserved luxury. My great-great Grand-Mere started that Mother's Day custom in France years before passing it along to succeeding generations. So let's get started!

Gauffres or Waffles:
4 1/4 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking powder
6 large eggs, separated
2 cups whole milk
2 sticks sweet butter, melted and cooled
1 tablespoon sugar
1 tablespoon orange zest
2 tablespoons of dark rum
Mix together flour, salt and baking powder. In a large bowl mix together egg yolks, milk, butter. Add liquid to the dry ingredients just until moistened. Whip the egg whites until soft peaks form, add the sugar, and whip until stiff peaks form. Fold the egg whites into the batter. Add gently the orange zest and the rum to the batter. Preheat and lightly grease a waffle iron. Pour batter to covert the surface of the waffle iron. Cook waffles according to the directions of the waffle iron. Bon appetit!
