Bonjour,
Well I am still waiting for Spring. Yesterday we had a couple of inches of snow. Enough! I remember spending a summer in Roquefort-les-Pins, a little town near Nice in the French Riviera with my Grand-Parents, my Dad, my Mom, my brother and two sisters. It was a great summer. Grand-Mere, my Maman (Mom) and I would go the market every morning and buy food we would prepare for the day. But the weather was so hot, we only had energy to prepare salads. The one salad that was a success with everyone was Salade Nicoise. My way is very traditional French. Let's try it!
Salade Nicoise:
1 pound potatoes
1 pound green string beans
4 medium tomatoes
6 anchovy fillets
12 green pitted olives (halves)
6 black olives (whole)
3 hard-boiled eggs (quartered)
1 1/4 cups vinaigrette ( check my 3/21 Blog for recipe)
2- 5 oz cans solid white Albacore tuna (drained and flaked)
Fresh parsley for garnish and lemon zest
Cook the potatoes in their skins in salted water. Remove when still firm, peel and cut in small dice. Cut the beans into squares, cook in salted water until soft, cool and drain. Pour the vinaigrette over the vegetables and mix gently in a large bowl. Decorate with the tomatoes cut into quarters, the anchovy fillets, halved the green olives, add the black olives (whole), the eggs cut in quarters, add the tuna and garnish with the parsley and lemon zest. Note: you can add grilled or broiled fresh fish, salmon, shrimp, or sea scallops, artichoke hearts, asparagus tips, fresh mushrooms, etc. Bon Appetit!
