Well, here we are in Autumn already. Boy, times flies! Leaving in Colorado, we are very lucky to have wonderful Indian Summers. So here is a great salad to do for those beautiful evenings. Enjoy!
Salade de Roquefort, Poire et Bacon:
4 oz Roquefort cheese
2 pears
12 large strawberries (halved)
12 slices thick bacon (crumbled)
1/2 lemon
4 cups mix lettuce
12 walnut halves
3 Tablespoons walnut oil
1 Tablespoon sunflower oil
2 Tablespoons white wine vinegar
Salt and pepper to taste
4 tablespoons fresh mint (chopped)
Chopped the Roquefort in small chucks. Peel the pears and remove their pits and sliced them in large slices. Cook the bacon until crispy in a hot skillet with the sunflower oil. Drain on paper towel, set aside. In a large bowl, mix the walnut oil and vinegar, add the lettuce and the walnut halves, mix well. Spread the salad mixture equally in four plates. Sprinkle the Roquefort on top, with the bacon , decorate with the pears slices and strawberries. Garnish with mint.
