Here is a dessert that is always delicious and very easy to make. This is a nice way to finish a long working week. We are all so busy, that we need a little pick-me-up. So reward yourself, we all deserve it!
Entremet au Chocolat:
3/4 cup whipping cream
3/4 cup whole milk
3 tablespoons sugar
1 cup semi-sweet chocolate chips
3 large egg yolks
2 teaspoons vanilla extract
Zest of half orange
1 teaspoon cold espresso coffee or 1 teaspoon Kahlua liqueur
Whipped cream and mint leaves for garnish or fresh berries.
In a saucepan, combine the cream, milk and chocolate chips. Stir over medium heat until chocolate is melted and mixture begins to boil. In a small bowl, beat the egg yolks, vanilla, orange zest and coffee until well combine. Stir in quickly the hot milk mixture into the egg mixture and return to the saucepan. Cook, stirring until its thickens. Strain into 4 glasses or dessert dishes, cover and chill for 2 hours. Garnish with whipped cream and fresh mint, or fresh berries. And a few shortbread cookies would work very well.
