Well, I think the 90 degree weather is over. Today we are having rain and 52 degrees. It is impossible to know what to wear. I am glad about the rain, we need it very badly. The trees have already turned. I was hoping for an indian summer, they are the best in Colorado. We were expecting snow up in the mountains today, so winter is not far behind. It is time for something good and warm. This soup is feeling and healthy. Try it! You like it!
Soupe aux Haricots:
1/4 pound thick bacon, chopped
1 sweet red pepper, seeded and chopped
1 green pepper, seeded and chopped
2 celery stalks, sliced
1 medium sweet onion, chopped
1 quart beef stock
12 oz can lima beans, drained
Dash hot sauce
Sea salt
Ground black pepper
1/4 cup sour cream
Fresh parsley
Grated cheese, optional
Chop bacon and fry it lightly in a skillet until the fat runs out. Place in a deep Dutch oven. Add the chopped peppers, celery, and onion. Add broth, and drained beans, bring to a boil and simmer for 25 minutes. Add hot sauce, salt and pepper. Remove soup from the heat and stir in the sour cream. Garnish with fresh parsley and grated cheese. Serve with toasted bread.
