I hope everyone have a great and long weekend. We drove in the mountains, the weather was perfect. On our way to Breckenridge, it is still winter, with a lot of snow. Some of the trees have not started blooming yet. We do need the water. It appears that we are in a drought. Hopefully the temperature won't be to hot. In the summer we can have temperatures above 100 degrees. That will not be good for the grass. Some cities in Colorado are under restrictions; they can water their lawns only 2 days a week. That is no good! It will look like the back of the moon, all brown! Here is a great salad to fix quickly. Enjoy!
Salade de Chou et Poires:
2 cups Granny apples, sliced
2 cups pear, sliced
1 (12oz) package of cabbage & carrot coleslaw
1 /4 cup celery, chopped
1/4 cup cider vinegar
1 tablespoon brown sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons poppy seeds
2 green onions, chopped
1 tablespoon mint, chopped
In a bowl, mix together; vinegar, sugar, poppy seeds, salt, pepper and green onions. Set aside. In a larger bowl, toss; apples, pears, coleslaw and celery. Pour vinaigrette on salad and toss well. Sprinkle mint. Serve at once.
Serves: 6
