A great Memorial weekend to everyone. Time to spend with friends and family. This recipe is perfect for those kind of Holidays. If you have to bring one dish, to this recipe. But it will great if you serve it yourself. Have the kids help you with the potatoes. Enjoy!
Salade de Pommes de Terre:
5 medium potatoes, cooked, peeled, diced
3 large eggs, hard-cooked, chopped coarsely
1/4 cup cucumber, chopped
1/4 cup red onion, chopped
1/4 cup green pepper, chopped
2 tablespoons pimiento, diced
3/4 cup mayonnaise
2 tablespoons sugar
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
3 bacon slices, cooked, crumbled
In a 5-quart bowl, combine potatoes, eggs, cucumber, onion, green pepper, and pimiento. In a medium bowl, combine mayonnaise, sugar, mustard, vinegar, salt, pepper, parsley, and dill. Mix well. Pour over potato mixture; blend well. Garnish with bacon bites. Cover and chill until ready to serve.
