Sorry for the silence last week, I have been very busy cooking for Volume 4. It will be a Christmas cookbook and I'm quite excited. I have a lot of marvelous recipes for the holidays.
The year is breezing by quickly, yet again. Halloween is just around the corner, followed shortly by the holidays with the cold and the snow. It goes so fast.
Here is a quick and delicious recipe, perfect for this long weekend. I love to take advantage of the great melons grown right here in Colorado. They are so colorful, so sweet. This Melon au Porto (Melons in Port Wine) recipe makes a perfect appetizer. So, let go, get the Port wine, and have a party. Happy Labor Day Weekend!
Melon au Porto:
1 large cantaloupe, ripe
12 tablespoons Port wine
6 small mint leaves
Cut the melon into small cubes. Pour the Port wine on top. Keep in the refrigerator until ready to serve.
Garnish with mint leaves.
Serves: 6
