My husband and I went to Aspen for Labor Day weekend and the weather was just perfect. The leaves are staring to turn and in a couple of weeks we will get beautiful golden colors. We had a lovely lunch in the Hotel Jerome's garden. They have the best jalapeno cornbread muffins, I will have to get get my hands on that recipe. As you may guess, the town was crowded due to the Aspen Jazz Festival. We did not get the chance to hear Keith Urban and Journey. Oh well, maybe next year.
Here is a drink we could all use; Chaud au Cidre (Hot Cider Tea). I like to serve this tea at room temperature. I learned how to make this in England with my grand-mère at an early age. It was a ritual with her. Every afternoon at 4:00, we would sit down and have a cup of tea with scones or cookies. We did that for a few years and it was lovely.
The Chaud au Cidre:
2-1/2 teaspoons black tea leaves
2-1/2 cups boiling water
1/4 cup sugar
Zest of 1 orange
Juice of 2 oranges (1cup)
1/2 cup Brandy
5 cups apple cider, chilled
8 thin lemon slices
Fill the teakettle or a saucepan with fresh cold water. When the water is hot, not boiling, pour a little into a clean teapot; then return the saucepan to the heat. Swirl the hot water around the teapot to heat it thoroughly, then throw the water away and wipe out the teapot, (preheating the teapot helps keep the water at the boiling point when it is poured over the tea). Put the tea leaves in the teapot add boiling water; allow to brew for 5 minutes. Place sugar in a large bowl. Strain hot tea into bowl and stir the sugar until dissolved. Stir in zest and orange juice. Set aside to cool. Just before serving, stir in the Brandy and cider. Pour into glasses or cups and float lemon slice on each serving.
