The past three weeks have been unlike anything I can remember living in Boulder. We have experienced a massive flood and the damage is unbelieveable. I wish a speedy recovery to everyone who was affected!
This experience has made me realize that material things don't count. We were fortunate to find only a little water in our basement, no big deal, but we were storing 17 years of things, furniture, boxes. That gave us a good excuse to clean out the basement. I decided that if I have not used any of those things for all those years, I did not really need them. Off they went. And you know what? Now the basement looks great.
In a few days we should be getting our first snow flakes. Here is a great recipe for Pain de Viande a la Dinde (Turkey Meat Loaf) to keep you warm. I serve it with mashed potatoes and peas. It feels you up. Enjoy!
Pain de Viande a la Dinde:
2 tablespoons vegetable oil
2 tablespoons butter
2 stalks celery, small to medium dice
1 medium sweet onion, small to medium dice
1 large carrot, small to medium dice
1 garlic clove, chopped
2 pounds ground turkey
2 large eggs
2 tablespoons Dijon mustard
dash of hot sauce, optional
salt and pepper
dash Worcestershire sauce
4 tablespoons fresh parsley, chopped
3 slices of white bread, crumbled
5 tablespoons tomato paste or Ketchup
Tomato sauce:
1 tablespoon butter
1/2 sweet onion, finely chopped
1 cup tomato sauce, store bought
ground black pepper
2 tablespoons fresh basil, chopped
Preheat oven to 400 degrees F.
In a medium skillet, melt butter and oil together over medium-high heat. Add the celery, onion, garlic and carrot and sauté for 5 minutes, or until soft. Put aside and let cool. In a large bowl, mix ground turkey, all other ingredients except the bread crumbs and tomato paste, add carrot mixture and parsley. Mix well with your hands (your best tools). Soak the bread crumbs in cold milk, then squeeze like a sponge and drain well. Add bread mixture to turkey mixture, blend well. Roll the meat into a firm loaf, spread tomato paste on top of loaf, and place in a baking sheet. Cook in the oven for 40-50 minutes or until cooked through. Serve at once.
Tomato sauce: Saute onion in the butter until translucent. Add your favorite tomato sauce. Warm through, add basil and ground black pepper. Spoon sauce over each slice of turkey loaf.
