It is still winter. I am sure that most of you had enough of the snow and cold. You are not alone. Here in CO, one day we have 50/60 degree weather and the next 3 days we have a foot of snow and super cold. What's up with that! I put all my winter cloths on the bed, that way I know where to find them. When the temperature reaches 75-80 degrees, I will put them away. I feel like a yo yo!. We can make a nice comfortable meal for dinner. How about pasta and peas. This recipe is great for a quick family dinner. The kids will love it.
Pates aux Petits Pois:
5 slices of thick bacon, cooked and crumbled
1 medium shallot, peeled and chopped
1 garlic clove, peeled and minced
12 ounces linguine or your favorite pasta, reserved 1/4 cup of pasta water
1 frozen package small peas
1 tablespoon olive oil
4 large eggs
Salt and pepper
1/3 cup Swiss cheese + extra for topping
4 tablespoons fresh parsley, chopped
Zest of 1/2 lemon for garnish
Cook pasta according to the package directions. In a large skillet, cook the bacon, drain on paper towel, set aside. In the same skillet, add the shallot and garlic, cook 3 minutes on low heat, or until soft. Transfer mixture into a bowl, set aside. Before the pasta is done, though in the peas. Cook 5 more minutes, drain and set aside. In the same skillet, heat the oil, over medium heat, cook the eggs for 1 minute, or until the whites set around the edges. Cover skillet; cook 2-3 minutes longer. With a slotted spoon, transfer the eggs to paper towels. In a large bowl, pour pasta and pea mixture, add bacon, and 1/2 of the Swiss cheese, adjust seasonings, mix well. If pasta looks a little dry add 4 tablespoons of the pasta water. Divide pasta in 4 bowls, top each with a fried egg, add extra Swiss cheese and garnish with lemon zest and parsley. Serve immediately.
Note: You can use shrimp, bay scallops and any vegetables.
