Well the holidays are here again. Here is a great dessert that everyone can make in short time. Ask the kids to help you, they will love it. Enjoy!
Tarte a la Citrouille:
1 sheet pie crust (store bought) and blind-baked instructions below
3 large eggs
2 cups puree pumpkin
3/4 cup sugar
1/2cup heavy cream
1/2 cup buttermilk
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1 tablespoon maple syrup
1 tablespoon Bourbon
1 teaspoon vanilla extract
whipped cream for garnish
Combine all ingredients and mis well. Place into a pre-baked pie crust. Bake at 425 degrees for 8-10 minutes, then lower oven temperature to 375 degrees for 12-20 minutes longer or until center is set. Remove form the oven and let cool before slicing. Garnish with whipped cream.
Note:
Blind-baking: the pie crust is lined with foil or parchment paper and then filled with dried beans. Bake the pie crust in a 425 degrees oven until the sides become a light brown (10-15) minutes, it prevent the crust from puffing up. At that time remove the foil and the beans, and return the crust to the oven for another 8-12 minutes until the entire pie crust is brown. Remove from the oven and let it cool down for a while before pouring the filling.
