I love the Indian summers in Colorado. It has been a long summer, and the leaves are finely turning. The colors are incredible. It is not like in the East where you have a lot of red trees. But we do have great gold and yellow colors. Soon it will be all white, and guest what? the holidays are just around the corner.
So, here is a recipe that everyone can enjoy: Gateau Breton aux Pommes.
Gateau Breton aux Pommes:
1 1/2 sticks of sweet butter, melted, cooled, divided plus more for the pan at room temperature.
1 1/4 cups all-purpose flour, plus more for the pan
4 firm apples (pink lady), peeled, cored, sliced in 1/2 inch thick
1 cup sugar
2 tablespoons sugar
1 teaspoon baking powder
1 teaspoon kosher salt
1 teaspoon finely grated lemon zest
3 large eggs, room temperature
2 tablespoons dark rum
Place rack in middle of oven and preheat to 350 degrees F. Butter and flour an 8" cake pan, set aside. Heat 2 tablespoons melted butter in a large skillet over medium heat, add apples, sprinkle with 2 tablespoons of sugar, and cook tossing occasionally, until apples are golden brown, (10-12 minutes), add rum and stir to mix well. Arrange half of the apples in the bottom of the cake pan so most of it is covered. Whisk baking powder, salt, lemon zest, flour, and remaining 1 cup sugar in a large bowl. Whisk in the eggs and remaining 10 tablespoons of melted butter until smooth. Pour half of the batter over the apples in pan, top with remaining apples, then pour the rest of the batter over. Bake cake until top is golden and tester inserted into the center of the cake comes out clean, (40-45 minutes). Transfer to a wire rack and let it cool slightly; turn out onto rack and let cool completely. Serve with whipped cream, a caramel sauce, or creme fraiche..
