Well, Summer is on his way. About time. I have hibernated long enough this winter. It is time to enjoy the wonderful fruits and vegetables, no more stews or soups. Try to grow your own veggies, like tomatoes, green beans, spinach, cucumbers, onions etc. Here is a salad that anyone can make: Salade aux Betterave-Orange avec Vinaigrette au Grand-Marnier. It is easy and the veggies are in full season, take advantage of it.
4 small beets, tops trimmed
2 large oranges, thinly sliced
3 tablespoons extra-virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons Grand-Marnier liquor or Triple Sec
1/3 cup red onion, thinly sliced (use mandolin)
1 large bunch of baby spinach, or watercress wash and spy dry
Fresh mint
Chopped pistachios
Place beets in a large , deep microwave-safe dish. Add water to cover beets; cover with plastic wrap and microwave on high until beets are tender, (15-20 minutes).
Grate about 2 teaspoons of zest from an orange and peel oranges. Cut top and bottom off each orange. Cut each orange horizontally into 1/3 inch thick rounds, remove any seeds, keep aside.
In a medium bowl, whisk olive oil, vinegar, Grand-Marnier, zest, salt and pepper, mix well.
Mix in onion slices.
Under running cold water rub the skins of the beets. Cut beets horizontally into 1/4 inch thick.
Season beets with salt and pepper to taste.
On a large platter, spread the greens to cover the bottom of platter, arrange beets in a wheel pattern and same with the orange slices.
Using a fork, lift onion slices from the dressing and spread over the beets and oranges.
Drizzle the dressing on top of salad.
Garnish with chopped mint and pistachios.
Serves: 6
