I was hopping for an Indian summer, but I think Mother Nature has other plans. We had our coldest night 35 degrees, so the furnace and the electric blanket are on. When you see the ski stations making snow, you know that winter is on its way. That means: soups or stews! This recipe is an old one from my grand-mere. I still can remember the wonderful aroma coming from her kitchen when I came home from school. It is a healthy soup.Give it a try. Bon Appetit!
Soupe aux Lentilles et Tomates:
1/4 cup extra virgin olive oil
2 garlic cloves , peeled and chopped
1 cup fersh plat-leaf parsley, picked and chopped
1-15 oz can peeled plum tomatoes
1 fresh Chile pepper, seeded and chopped
1-19 oz can lentils, drained and rinse
Salt and freshly ground black pepper
Pinch of sugar
1/4 cup chicken stock
1) In a saucepan, heat olive oil,add garlic, parsley, and Chile pepper.
2) Saute for a few minutes on low heat.
3) Add plum tomatoes and juice from the can.
4) With the back of a wooden spoon, break up the tomatoes ( I use my fingers) into small chunks.
5) Add the lentils, salt and pepper and sugar.
6) Add stock and allow to cook for 15-20 minutes, until soup has thickened.
Serve immediately with a grilled ham and cheese sandwich.
Serves: 2-4
